This dish is seriously a crowd-pleaser. It’s relatively easy to make, uses ingredients you can typically find at your local grocery store, and the combination of the chicken, vegetables, and tomato-based sauce is just heavenly. Get ready for some serious flavor!

Ingredients:

  • 1.5 lbs Chicken, cut into serving pieces
  • 1 tbsp Cooking Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 medium Red Bell Pepper, chopped
  • 1 medium Green Bell Pepper, chopped
  • 1 cup Potato, cubed
  • 1 cup Carrots, cubed
  • 1 can (8 oz) Tomato Sauce
  • 1 cup Chicken Broth
  • 1/2 cup Frozen Peas
  • 2 tbsp Soy Sauce
  • 1 tbsp Fish Sauce (Patis) - optional
  • 1 tsp Sugar
  • Salt and Pepper to taste
  • Hotdogs or Vienna Sausage (optional, but a common addition!)

Instructions:

  1. First, season the chicken pieces with salt and pepper. This helps to build a good base flavor.
  2. Heat the cooking oil in a large pot or Dutch oven over medium heat. Brown the chicken on all sides. Don’t overcrowd the pot; you might need to do this in batches. Browning the chicken adds a lot of depth to the flavor. Once browned, remove the chicken from the pot and set aside.
  3. In the same pot, sauté the onion and garlic until softened and fragrant. This usually takes about 2-3 minutes.
  4. Add the red and green bell peppers and cook for another 2-3 minutes, until slightly softened.
  5. Now, add the potatoes and carrots. Cook for about 5 minutes, stirring occasionally, until they start to soften slightly.
  6. Pour in the tomato sauce and chicken broth. Bring the mixture to a simmer.
  7. Return the browned chicken to the pot. Add the soy sauce, fish sauce (if using), and sugar. Stir well to combine.
  8. Reduce the heat to low, cover the pot, and simmer for about 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  9. If you’re using hotdogs or Vienna sausage, add them to the pot during the last 10 minutes of cooking.
  10. Stir in the frozen peas during the last 5 minutes of cooking.
  11. Taste and adjust seasoning as needed. Add more salt, pepper, soy sauce, or sugar to your preference.
  12. Serve hot with steamed rice. Seriously, you HAVE to have rice with this!
