This is a classic Filipino stew, and I have to say, it’s become a new favorite in my house. It’s perfect for a weeknight dinner because it’s relatively quick to make, and it’s packed with vegetables, so you get a healthy and delicious meal all in one. Plus, the whole family loved it! Chicken Afritada - Mama Sita’sHere’s what you’ll need to make this delicious Chicken Afritada:

Ingredients:

  • 1.5 lbs Chicken pieces (bone-in or boneless, your preference! I used bone-in thighs for extra flavor)
  • 1 tbsp Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 1 Green Bell Pepper, chopped
  • 1 cup Tomato Sauce
  • 1 cup Chicken Broth
  • 1/2 cup Water
  • 1/4 cup Frozen Peas
  • 1/4 cup Diced Carrots
  • 2 medium Potatoes, peeled and cubed
  • 1/4 cup Raisins (optional, but I love the sweetness they add!)
  • 1 tbsp Soy Sauce
  • 1 tsp Sugar (or more to taste)
  • Salt and Pepper to taste
  • 1 Bay Leaf

Instructions:

  1. First, season your chicken pieces with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium heat. Brown the chicken on all sides. Remove the chicken and set aside. This step is important for developing flavor!
  3. In the same pot, sauté the onion and garlic until softened and fragrant. This usually takes about 3-5 minutes. Don’t let the garlic burn!
  4. Add the red and green bell peppers and cook for another 2-3 minutes until slightly tender.
  5. Pour in the tomato sauce, chicken broth, and water. Add the bay leaf, soy sauce, and sugar. Bring to a simmer.
  6. Return the chicken to the pot. Cover and simmer for about 20-25 minutes, or until the chicken is cooked through and tender.
  7. Add the potatoes and carrots to the pot. Simmer for another 10-15 minutes, or until the vegetables are tender.
  8. Stir in the frozen peas and raisins (if using). Cook for a few more minutes until the peas are heated through.
  9. Taste and adjust the seasoning as needed. Add more sugar if you prefer a sweeter sauce, or more soy sauce for a saltier flavor.
  10. Remove the bay leaf before serving.
  11. Serve hot with steamed rice.
