Chicken Afritada
This is a classic Filipino stew, and I have to say, it’s become a new favorite in my house. It’s perfect for a weeknight dinner because it’s relatively quick to make, and it’s packed with vegetables, so you get a healthy and delicious meal all in one. Plus, the whole family loved it! It’s a great way to introduce yourself to Filipino cuisine.
Here’s what you’ll need to make this delicious Chicken Afritada:
Ingredients:
- 1.5 lbs Chicken pieces (bone-in or boneless, your preference! I used bone-in thighs for extra flavor)
- 1 tbsp Olive Oil
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 Red Bell Pepper, chopped
- 1 Green Bell Pepper, chopped
- 1 cup Tomato Sauce
- 1 cup Chicken Broth
- 1/2 cup Water
- 1/4 cup Frozen Peas
- 1/4 cup Diced Carrots
- 2 medium Potatoes, peeled and cubed
- 1/4 cup Raisins (optional, but I love the sweetness they add!)
- 1 tbsp Soy Sauce
- 1 tsp Sugar (or more to taste)
- Salt and Pepper to taste
- 1 Bay Leaf
Instructions:
- First, season your chicken pieces with salt and pepper.
- Heat the olive oil in a large pot or Dutch oven over medium heat. Brown the chicken on all sides. Remove the chicken and set aside. This step is important for developing flavor!
- In the same pot, sauté the onion and garlic until softened and fragrant. This usually takes about 3-5 minutes. Don’t let the garlic burn!
- Add the red and green bell peppers and cook for another 2-3 minutes until slightly tender.
- Pour in the tomato sauce, chicken broth, and water. Add the bay leaf, soy sauce, and sugar. Bring to a simmer.
- Return the chicken to the pot. Cover and simmer for about 20-25 minutes, or until the chicken is cooked through and tender.
- Add the potatoes and carrots to the pot. Simmer for another 10-15 minutes, or until the vegetables are tender.
- Stir in the frozen peas and raisins (if using). Cook for a few more minutes until the peas are heated through.
- Taste and adjust the seasoning as needed. Add more sugar if you prefer a sweeter sauce, or more soy sauce for a saltier flavor.
- Remove the bay leaf before serving.
- Serve hot with steamed rice.
