Idli Sambar: A South Indian Delight

Now, let’s gather our ingredients and embark on this flavorful journey. Remember, the key to good Idli Sambar is fresh ingredients and a little bit of patience. Don’t rush the fermentation process; it’s what gives the idlis their unique texture.
Idli Ingredients:
- 1 cup Idli Rice (soaked for at least 4 hours)
- 1/4 cup Urad Dal (split black lentils, soaked for at least 4 hours)
- Salt to taste
Sambar Ingredients:
- 1 cup Toor Dal (split pigeon peas)
- 1 cup mixed vegetables (drumstick, pumpkin, okra, eggplant, onions, tomatoes - feel free to customize!)
- 1 tbsp Sambar Powder
- 1/2 tsp Turmeric Powder
- 1/2 tsp Red Chili Powder (optional)
- 1 tbsp Tamarind Pulp (soaked in 1/2 cup warm water, extract the juice)
- 1 tbsp Oil
- 1 tsp Mustard Seeds
- 1 tsp Urad Dal (split black lentils)
- 1/4 tsp Asafoetida (hing)
- A few Curry Leaves
- 2-3 Dried Red Chilies
- Salt to taste
- Cilantro for garnish
Idli Instructions:
- Grind the soaked Idli Rice and Urad Dal separately until you get a smooth batter.
- Mix both batters together with salt and let it ferment overnight (or for at least 8 hours) in a warm place. The batter should almost double in size and be bubbly.
- Grease the idli molds with oil.
- Pour the idli batter into the molds.
- Steam the idlis for about 10-12 minutes, or until a toothpick inserted comes out clean.
- Let them cool slightly before removing them from the molds.
Sambar Instructions:
- Cook the Toor Dal in a pressure cooker with turmeric powder until soft and mushy (about 3-4 whistles). Mash it well.
- In a separate pot, cook the mixed vegetables with a little water, salt, and sambar powder until they are tender.
- Add the mashed Toor Dal to the vegetables.
- Add the tamarind juice and red chili powder (if using) to the sambar. Bring it to a boil.
- Heat oil in a small pan. Add mustard seeds, urad dal, asafoetida, curry leaves, and dried red chilies. Let the mustard seeds splutter.
- Pour this tempering over the sambar.
- Simmer for a few minutes.
- Garnish with cilantro.
Serve the hot, fluffy idlis with the tangy and flavorful sambar. A dollop of coconut chutney on the side completes the experience.
