- 1 cup Toor Dal (split pigeon peas)

- 1 tbsp Sambar Powder
- 1 tsp Turmeric Powder
- 1/2 tsp Asafoetida (hing)

- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- 2-3 Dry Red Chilies

Instructions:
- Prepare the Dal: Wash the Toor Dal thoroughly. Pressure cook it with 2 cups of water and a pinch of turmeric powder until soft and mushy (about 3-4 whistles). You can also cook it in a pot on the stovetop until tender. Mash it well with a spoon or whisk.
- Cook the Vegetables: In a large pot, heat 1 tablespoon of oil. Add the chopped onions and sauté until translucent. Add the chopped tomatoes and cook until they soften.
- Add the Vegetables: Add the mixed vegetables to the pot. Sauté for a few minutes. Then, add about 2 cups of water, turmeric powder, asafoetida, and salt to taste. Cover and cook until the vegetables are tender but not mushy. The cooking time will depend on the vegetables you are using.
